The Ultimate Salad + My Pesto Dressing
This is lunch most days and I love it!
Handful each of baby kale, arugula and spinach
Half an heirloom tomato, chopped
Half a pepper, chopped
About a cup of kalamata olives, de-pitted
One cup of lentils
Handful of mixed sprouts (I have a lot of broccoli sprouts for the sulphorophane)
Put all in a massive salad bowl. Then dress with this dressing:
Ingredients for pesto
Half cup of walnuts
Juice of one lemon
Put all in blender. Blend until smooth.
I then take about two tablespoons out, and mix with a tablespoon of balsamic vinegar and a heaping teaspoon of wholegrain mustard, until fully mixed.
Dress the salad, and enjoy!
